Ingredients

pearls of 1 finger lime
2 sprigs native mint
1 Tbsp caster sugar
1 Tbsp freeze-dried Davidson plum powder
¼ cup limoncello
4 glasses sparkling wine
finger lime pearls, to garnish

How to do:

1 Combine the finger lime pearls, mint and sugar in a cocktail glass and pound with a muddling stick. Mix in the Davidson plum powder and limoncello, then set aside for 2 minutes.
2 Strain through a fine sieve into the sparkling wine, then garnish with finger lime pearls.
