Oyster foam with lemon caviar, a recipe for your favorite one!

Ingredients / for 4 people
12 Gillardeau oysters n ° 3
2 caviar lemons
1 lime
100 g of mascarpone
Pepper mill
How to do
1 Open the oysters with a shelling knife, empty the first water and place all the oysters in a container. Rinse four shells and dry them on paper towels.
2 Incorporate the mascarpone in the container with the oysters, add half of the lime juice and a turn of the pepper mill. Mix for 30 seconds to obtain a foam then set aside in the fridge.
3 Take and chop the lime zest . Incise the caviar lemons, squeeze between two fingers without forcing too much to bring out the lemon grains.
4 Place the oyster shells on the plates (you can place them on a small mound of coarse salt so that they hold well horizontally).
5 Garnish the shells with the mascarpone oyster foam.
6 Place a few grains of lemon caviar and lime zest on the surface of the foam.
To finish
Serve with a glass white wine for a perfect taste!
